I double-grind my ground turkey with onion and garlic (1/2 large onion and 1 clove garlic per lb turkey), then add finely ground black and white pepper, salt. Then I whip up 1/2 cup egg whites and gently fold whipped egg whites into the seasoned turkey grind. Whipped egg whites and onion add moisture and flavor to lean turkey grind, without adding any fat. You can then pan fry this mix, or make turkey burger patties.
