I warm up my skillet on the stove, turn it down to low-medium heat, spray it with olive oil cooking spray, add egg whites, then add in the oatmeal and a little bit of cinnamon. I gently stir it all together with a fork before the egg starts to cook and then let it cook slowly on low-medium heat. Once the edges are somewhat firm, I loosen the edges all around the skillet with my spatula and flip it. It makes one big “pancake”. I throw it on a plate and add a little bit of sugar-free syrup. It’s not always pretty, but it’s gotten better with time!
