    As I look through the vegan meal plan, I don’t really see too many recipes. Silly question: am I just combining ingredients to cook or what am I even doing? LOL, I have no idea what’s going on but I have all of the food I need!

    Your meals are already created for you with each meal. Take a deep breath and let Nicole do the thinking for you. Just follow what is already down on paper 🙂

    Thanks! I plan to save 15g/meal.
    My fear is if I eat the 45g/meal and go low during the day, that I’ll be way over for the entire day, so saving the 15g feels like a good plan. At least for the first couple of weeks as I adjust to the program.
    With T1D, some days are perfect and then I could eat the same thing the next day and my blood sugar react differently.
    I have pretty good blood sugar management, I feel comfortable with my plan, I just wanted to ask if I don’t use/need the 15g that I save, what would be the best option for the best results- eat them by the end of the day to make sure I get all my macros or not eat them.
    I know my insulin sensitivity will increase and I’ll have even better control over the course of the Challenge, I think I’ll see how it goes the first 2 weeks.

    It’s a great question as I am wondering how to adjust over time as my numbers get better!

    Hi! I’m a T2D and have found that moderate carbs in each meal has been best for me. I don’t know if that answers your question, but that has been my experience.
