    Hi,
Has anyone made the egg bites recipe? It says 6 eggs but I could not get the egg mixture to fill the muffin cup and give me 12 muffins. Wondering if I should add more eggs?

I was going to make them today. Think I’ll wait to see the follow up.

I am sorry i was wrong for thinking they might just be 3 servings. I was able to fill mine about 3/4 of the way up with the egg mixture. It made 12 muffins.

Disregard my previous post please. I was able to make 12 with the recipe. I filled the muffin tin about 3/4 with the egg mixture.

    Thanks Malorie,
Mine came out ok, but I had to add three more eggs. The recipe said to fill the muffin tin to the top with the egg mixture so I ran out. Next time I won’t fill to the top. I haven’t tried them yet but they look good!

Cathleen, just a clarification that the recipe says to “pour egg mixture over top“ (meaning over turkey mixture) “until cups are almost full” 🙂

I read it says to POUR over the mixture. Adding more eggs changes the macros of the recipe significantly as each egg is 5g of fat as well as significant amounts of extra calories. Correct? If anything at all I would have probably used egg whites not whole eggs.

I did pour the egg mixture over the top until cups are almost full and I ran out of the egg mixture. I’ll just have to do a better job of distributing the mixture next time.

Yea, 3 eggs does change the macros but it doesn’t change it significantly as it’s spread over 12 muffins – it’s not that much. And I can cut a bit somewhere else. I log all the meals into my fitness pal so I can be sure I’m on track with the total macros for the day. I don’t think one week of adding 3 eggs to the egg bites is going to make or break my results. Seeing that others didn’t have a problem with the recipe I’ll just have to do better next time. I’m terrible in the kitchen. LOL. :)))

Did you use cooked or raw turkey when making these?

Following – just made my egg bites. I did pour the egg mixture over the Turkey uncooked, it will cook the Turkey.

I cooked the turkey first, to be on the safe side.

I cooked the turkey first and then used just the 6 eggs and best well and poured also about 3/4 in each muffin tin and they turned out great

Yes always cook the ground turkey first. The taste and texture is better and its safer.

I had the large 6 muffin tin, they didn’t fill it up so I just made sure they were all divided equally. I would not add anything other than what the recipe calls for. I don’t like it with ground turkey but will eat these and try them with turkey sausage or something.

I did not get 12. I’ll only eat one for each meal.

I made these with raw turkey (kind of like a crust for the egg) then added eggs to the top. Didn’t quite fill the muffin tin, but close! They turned out great!… like a little breakfast sandwich patty YUM!

I made them and had to use 3 more eggs
