I am wanting to make deconstructed stuffed peppers. I was going to slice up peppers and roast in the oven and weigh separately along with measuring rice to fit within macros and exchange list. Curious for how I do the ground turkey mixture? I usually include ground turkey, onion, celery and diced onion with the meat. Based on your experience, is there an easier way of doing this than keeping all veggies out of the turkey and weighing everting separately? I was thinking of just weighing out 5oz of the turkey mixture with the veggies inside instead of the 4oz my plan calls for and just hoping that is close enough. Sorry to trouble you, I would great appreciate any advice you have to offer.

ParticipantAre you saying you cook the Turkey with the veggies? I usually do the turkey and then add to veggies. Not sure if your process.
