Maureen- that doesn’t exactly answer my question.
What I am trying to understand is how 250g of spaghetti squash is equivalent in carbs as 2 oz of potatoes? According to the veggie food exchange (assuming my math is correct), 250g of spaghetti squash is approximately 25g (10g carbs=100g in this case). According to the starchy carb exchange, (assuming my math is correct) 2oz of potatoes are approximately 12.5g of carbs (25g=4oz in this case).
Sooooo, if we are to be consuming approximately 19g of carbs per meal I’m confused on how either one of these work let alone how they are interchangeable?? What am I missing here?

According to the conversion charts- 250g of spaghetti squash would equal about 25 carbs vs. 2oz of potatoes or 50g of rice which equals about 12.5 g of carbs. Are carbs from veggies treated differently than starches? Help please! Thank you!
