Hiya, PACU RN here and I had the same concern before the last challenge (my first). I bought a cooler (6 pack fitness) that neatly stores all my meals and keeps them cold with icepacks all day. I keep it out of view in the kitchen where I can quickly pop in and grab the cold stuff(yogurt, refrigerator oats, hard boiled eggs). When/if my turn for a lunch break comes up, I heat up the hot stuff. I keep a 64oz drink bottle there too to make sure I get in enough water. (Thank god for my camel bladder ; )). It took some adjusting but I manage to get all my meals in.
