This Baked Sweet Potato Veggie Casserole combines your favorite baked potato goodness with eggs and a rainbow of veggies for a dish that’s as nutritious as it is delicious.
Whether it’s a side for dinner or the star of your brunch table, this casserole is proof that leftovers can become the life of the party! Enjoy!
INGREDIENTS
• 12 oz baked sweet potatoes, peeled and sliced (about 2 medium)
• 4 large eggs, slightly beaten
• 1/2 cup egg whites
• 2 tbsp olive oil
• 1 red onion, finely chopped
• 1 cup broccoli florets, chopped
• 1 red bell pepper, diced
• 1 cup mushrooms, sliced
• 1 tsp garlic powder
• 1 tsp smoked paprika
• 1/2 tsp ground cumin
• Salt and pepper to taste
PREPARATION
• Preheat oven to 375 degrees Fahrenheit and grease a 9×13-inch casserole dish with olive oil or nonstick spray.
• Heat the olive oil in a large skillet over medium heat. Add red onion, broccoli, bell pepper, and mushrooms. Sauté for about 5 minutes until the veggies are slightly softened. Season with a pinch of salt and pepper.
• In a large bowl, combine the beaten eggs, egg whites, garlic powder, smoked paprika, cumin, salt, and pepper and mix until fully mixed.
• Assemble the Casserole: Spread the sautéed vegetables evenly across the bottom of the prepared casserole dish. Layer the sliced sweet potatoes over top. Next, Pour the egg mixture over the veggies, spreading it evenly with a spatula.
• Place the casserole in the oven and bake for 25–30 minutes, or until the top is set and slightly golden. A toothpick inserted into the center should come out clean.
• Let the casserole cool for 5–10 minutes before slicing into squares. Serve warm and enjoy!
NOTE: This tastes delicious reheated as leftovers or even eaten right out of the fridge!
