Mediterranean foods are often, by nature, healthy. They are typically rich in heart-healthy Omega-3 fats due to the olive oil, seafood, nuts, as well as high antioxidant rich foods such as fruits and veggies. It you love Mediterranean foods like I do, it’s just a bonus that the preparations are absolutely delicious.

One of my favorites is the Mediterranean Watermelon Salad. This refreshing salad screams summertime with the crisp delicious watermelon and cucumber, combined with the zesty feta cheese and red onion. Serve it as a main course or as a side dish. With just a few simple ingredients, it’s a cinch to prepare with very little cleanup. Enjoy!


• 4 cups fresh watermelon, cubed
• 1/2 cup fresh strawberries, sliced
• 1/2 cup reduced fat feta cheese crumbles (like Athenos)
• 1/4 cup cucumber, thinly sliced
• 1/4 red onion, finely chopped
• 2 tbsp fresh basil leaves, finely chopped
• 2 tbsp fresh mint leaves, finely chopped
• 2 tbsp olive oil
• 2 tbsp red wine vinegar
• 1 tbsp honey or agave
• 1/4 tsp each salt and pepper, or to taste


• In a small bowl, whisk together olive oil, vinegar, honey, salt and pepper until well combined.

• In a separate large bowl, combine watermelon, strawberries, cucumber, onion, feta, and basil leaves. Gently stir in the vinaigrette and put in the fridge for at least 20 minutes to set (or up to 2 hours).

• When ready to serve, remove from the fridge, add the mint leaves, and gently stir to refresh the dressing and coat. Enjoy!
