Protein muffins are one of the most versatile treats because they can serve a variety of purposes, such as a healthy breakfast alternative, a mid-day snack, a treat to satisfy your sweet tooth, a pre-workout snack…the list goes on and on.

These Banana Nut Bread Protein Muffins combine healthy carb sources from fresh bananas and wheat flour with high protein content from whey powder, Greek yogurt and egg whites. These delicious treats pack 16 grams of protein per jumbo muffin and contain no added sugar. Enjoy!

 

INGREDIENTS

• 2/3 cup white whole wheat flour
• 2 scoops nPower Nutrition Isolate Vanilla Cupcake protein powder
• 1/3 cup oats
• 2 tsp ground cinnamon
• 1 tsp baking soda
• 1 tsp baking powder
• 1/4 tsp nutmeg
• 2/3 cup egg whites
• 1/2 cup plain non-fat Greek yogurt
• 1 large ripe banana
• 1 large egg
• 2 tbsp light butter, softened at room temperature
• 3 tbsp chopped walnuts (or sub pecans)

PREPARATION

• Preheat oven to 350 degrees Fahrenheit.Line a 12-cup muffin tray or 6-cup jumbo muffin tray with liners. Spray liners with non-stick spray. Set aside.

• This is how easy it gets: add all the ingredients with the exception of the walnuts to a food processor and blend until smooth (Yes, add them all at once!).

• Scoop batter evenly into each of the muffin cups.

• For regular muffin tin: bake for approximately 15 minutes or until a knife inserted into the center comes out clean.

• For jumbo muffin tin: bake for approximately 22-25 minutes or until a knife inserted into the center comes out clean.

• Sprinkle the chopped walnuts onto the tops of the muffin batter.

• Remove from oven and let cool before serving. Enjoy!
