In the season of pumpkin spice everything—what better time to create some recipes full of pumpkin spice and everything nice? We are not only making pumpkin spice muffins, but we’re adding a cream cheese frosting like swirl right into the muffin!

These Pumpkin Spice Cream Cheese Swirl Muffins are perfectly sweet and savory with the warm pumpkin and cinnamon spices combined with cream cheese. They are perfect any time of day—particularly when your sweet tooth kicks in. Each of these jumbo muffins packs a whopping 19 grams of protein. Enjoy!

INGREDIENTS

• 1 1/4 cup oat flour
• 1 cup pumpkin puree
• 3/4 cup plain non-fat Greek yogurt
• 2 scoops nPower Nutrition Isolate Vanilla Cupcake protein powder
• 2 large eggs
• 2 tsp ground cinnamon
• 1 tsp baking soda
• 1 tsp baking powder
• 1/2 tsp pumpkin pie spice
• Cream Cheese Swirl
• 8oz package reduced fat cream cheese, room temperature
• 3/4 cup granulated sweetener
• 1 large egg
• 1 tsp vanilla extract

PREPARATION

• Preheat oven to 350 Fahrenheit.

• Line a 12-cup muffin tray or 6-cup jumbo muffin tray with liners. Spray liners with non-stick spray (if you don’t use liners, just spray the muffin tin with non-stick spray). Set aside.

• In a bowl, mix together the flour, protein powder, cinnamon, pumpkin pie spice, baking soda, and baking powder.
In a separate large mixing bowl, beat the egg, pumpkin puree, and yogurt until smooth.

• Slowly mix in the dry ingredients into the bowl with the egg mixture until a batter is formed. Set aside.

• In the bowl that the dry ingredients were in, beat together the cream cheese swirl ingredients. Scoop the cream cheese swirl into the bowl with the pumpkin batter and gently blend together with just a few stirs (don’t overmix so you keep your swirl effect).

• Scoop batter evenly into each of the muffin cups and bake:
• If regular muffin tin: bake for approximately 15 minutes or until a knife inserted into the center comes out clean.
• If jumbo muffin tin: bake for approximately 20-25 minutes or until a knife inserted into the center comes out clean.

• Remove from oven and let cool before serving. Enjoy!
