These little snowballs are the perfect treat to bring some winter magic to your holiday celebrations!

They’re naturally sweetened, full of coconut flavor, and so cute they might just make your dessert table the talk of the season.

Best of all, they’re so easy to make and healthy enough to enjoy guilt-free.

Let’s roll into the fun!

INGREDIENTS

• 1 1/2 cups unsweetened shredded coconut (divided)
• 1 cup almond flour
• 1 scoop nPower Nutrition Isolate Vanilla Cupcake protein powder
• 3 tbsp honey
• 3 tbsp coconut oil, melted
• 1 tsp vanilla extract
• pinch of sea salt

PREPARATION

• Preheat oven to 325 degrees Fahrenheit.

• Line a baking sheet with parchment paper.

• In a mixing bowl, combine almond flour, 1 cup of shredded coconut, protein powder, melted coconut oil, honey, vanilla extract, and sea salt. Stir until the mixture forms a sticky dough.

• Roll the Snowballs: scoop out about 1 tablespoon of dough and roll it into a ball. Repeat with the rest of the dough. You should have about 12-15 balls.

• Coat with Coconut Snow: place the remaining 1/2 cup of shredded coconut on a plate. Roll each ball in the shredded coconut until completely coated.

• Arrange the coated balls on the prepared baking sheet. Bake for 12-15 minutes, or until they’re lightly golden. Keep an eye on them to avoid over-browning.

• Allow the snowballs to cool completely before serving. They’ll firm up as they cool. Enjoy!

Tips For Extra Magic:
• Add a dash of cinnamon for a warm holiday spice.
• Dip the bottoms of the cookies in dark chocolate for a festive twist.
• Store in an airtight container for up to 5 days (if they last that long!).
